Carrot Cake

Ingredients

Cake
  • 2 cups all purpose flour
  • 2 cups sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 1/4 cup neutral oil (canola oil, vegetable oil)
  • 3 cups grated carrots
  • 4 eggs
  • 1/2 cup chopped walnuts or pecans, optional
  • 2 tsp vanilla extract
Frosting
  • 4 oz cream cheese
  • 1/4 cup butter, softened
  • 2 cups confectioners sugar

Method

Cake

  1. Preheat the oven to 180 C/350 F.
  2. Line a 13x9 inch pan with parchment paper.
  3. Combine all dry ingredients in a bowl and whisk until fully combined.
  4. Add oil to the flour mixture while whisking.
  5. Mix in the eggs 1 at a time.
  6. Fold in the carrots (and nuts if you want) gently.
  7. Pour the mixture into the prepared pan, and bake for 50 to 60 minutes, or until a toothpick can be inserted and come out clean or with some cooked crumbs stuck to it.
  8. Remove from pan to cool completely before applying frosting.

Cream Cheese Frosting

  1. Beat the butter until it is softer than the cream cheese.
  2. Make sure the cream cheese is room temperature, then beat it with the butter until combined. If it is not room temperature, the butter will clump up and not combine properly.
  3. Mix in the sugar in batches, starting small (so as not to have a mushroom cloud of confectioners sugar).
  4. Once it is fully incorporated, make sure the cake is fully cooled before spreading it on.

Notes

  • If you shred too many carrots, you can freeze them for later use.
