Taco Night Chili

Ingredients

  • 1000 g ground beef
  • Half onion (whole if small)
  • 1 tbsp tomato paste
  • 1 cup chicken broth
  • 1.5 tbsp chili powder (less or more to taste)
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp paprika (smoked preferrable)
  • 1/2 tsp dried oregano
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
    It is possible to sub the spices with a spice mix in a pinch.

Method

  1. In a deep, heavy bottomed pan on medium heat, salt and cook the onions until they begin to brown.
  2. Add the ground beef (or pork mixture, see notes) and cook until browned on all sides.
  3. Add in the tomato paste and briefly brown on bottom of the pan while stirring (about 30 seconds).
  4. Add in the chicken broth and bring to a simmer.
  5. Once it is simmering, add the rest of the ingredients (chili powder, cumin, garlic powder, paprika, oregano, onion powder, ground black pepper, and a dash more salt OR a spice mix packet) and simmer until most of the water has evaporated off (or less if you prefer a thinner chili).
  6. Serve immediately, I recommend serving it with cheese, cilantro, and inside of a flour tortilla or with rice.

Notes

  • If beef/pork mixture is more readily available than pure beef, it is okay to use that. However, you will need to pour off extra oil after step 2. It is delicious for use in cooking eggs, or basically anything at all.
  • You can also add a can of beans in place of half of the ground beef, and it is also delicious but will taste different.
